Vegan baking adventure
This blog has never touched on the topic of baking. Seems overdue. I’m a good cook, but baking has always been a puzzle to me. My bread is too dry, my cakes fall, my biscuits are hard as pucks. Somehow I always get it wrong.
I just spent a luxurious 20 minutes on the deck, absorbing coffee on a rainy summer morning, reading the introduction to Rebecca Coleman’s new cookbook, Vegan Baking Made Easy. Charming (of course, it’s Rebecca). And I gotta say, she really does make it sound easy.
This bit made me LOL:
“Whichever type of [nondairy milk] you use, watch for added flavouring, such as vanilla. It’s not a terrible thing if you’re baking a cake, but believe me, it won’t make your pasta sauce taste any better.”
Sounds like the voice of experience. 😜
And this cookbook really is perfect for people like me looking to try baking again, having never really done well with it in the past. I suspect “people like me” are a large audience. Now, to work on my shopping list…
